Rustic and hearty are the two words that come to mind when I think about my Italian Vegetable Soup. Filled with a blend of vegetables, garbanzo beans, and pasta, this soup gets a little kick (but not too much!) from the fire roasted tomatoes and red pepper flakes. Add on one of my mini baguettes and you have yourself the perfect lunch or light dinner.

Ingredients :  Carrots, onion, celery, spinach, cauliflower, fire roasted tomatoes, garbanzo beans, ditalini pasta, vegetable stock, garlic, basil, oregano, parsley, thyme, bay leaf, red pepper flake, lemon juice, salt and pepper.
